I adapted this from a recipe at allrecipes.com. Takes time too cook, but otherwise very easy and definitely tasty.
3 T vegetable oil
1 onion, chopped
2 pounds cubed beef stew meat
2 large cloves garlic, minced
2 c water
1/4 c reduced sodium soy sauce
1/4 c Worcestershire sauce
1 t freshly ground black pepper
8oz sliced mushrooms (white or cremini)
2 T butter
1 (.75 ounce) packet reduced sodium, dry brown gravy mix
1/2 cup water
In a large skillet, heat oil over high heat. Saute the onion until almost translucent.
Toss the stew meat in some flour to coat lightly. Add the meat to the pan with the onions, and cook on high heat until meat is browned on all sides; about 3-5min. Add the garlic and cook 1min.
Pour the water, soy sauce, and Worcestershire sauce into the skillet. Grind in some pepper. Bring to a boil and reduce heat. Cover and simmer 1 1/2 to 2 hours.
While the meat is cooking, saute the mushrooms in the butter until browned. Add to the meat mixture when there is about 30min left to cook.
Once meat is tender, combine the gravy mix with 1/2 cup water in a cup or small bowl. Mix thoroughly and stir into the meat mixture. Bring to a boil stirring frequently until slightly thickened. Remove from heat and serve. Yummy over mashed potatoes 🙂
