Grilled Flank Steak with Avocado-Lime Salsa

Steak:
1 T chili powder
1 T Cholula Original Seasoning
2 t grated lime rind
1/2 t salt
1/4 t greshly ground black pepper
1 flank steak, trimmed

Salsa:
1 avocado, diced
1 tomato, seeded and chopped
1/3 c red onion, chopped
1/4 c chopped fresh cilantro
1/2 t grated lime rind
2 T fresh lime juice
1/4 t salt
1/4 t Tabasco

Combine the first 5 ingredients. Score a shallow diamond pattern on both sides of the steak. Rub the chili powder mixture over steak. Cover and chill an hour.

Combine the salsa ingredients and chill as well.

Heat the grill to med-high. Grill the steak 5-6 min per side until desired doneness.

Allow steak to rest 5 min. Slice across the grain into thin slices. Serve with salsa spooned over.

Note: this recipe can be prepared as tacos with corn tortillas and shredded cabbage. I just think it’s great by itself.
