Olde English Cheese Spread

Growing up, we had a sailboat in Gloucester, MA. There was a restaurant not too far from there in Ipswich called the Hearthside, and, in pure New England fashion, they served crackers and English cheese similar to this recipe as soon as you sat down. This recipe is all home to me with memories of my grandparents and going to that restaurant after a nice long sail.

Olde English Cheese Spread

¼ c mayonnaise
¼ c milk
1 lb Velveeta
1 t whole grain mustard (I liek Grey Poupon Harvest Coarse Ground)
¼ t paprika
½ t Worcestershire sauce
½ t garlic powder
½ t Tabasco
1 (5.5oz) can vegetable juice
3 T prepared horseradish
2 T green onion, very thinly sliced

Combine first 6 ingredients and cook over med until smooth. Stir in vegetable juice, horseradish, and green onions. Spoon into a crock and chill for at least 2 hours. Serve with crackers or pretzels. Great with bagel chips too!
