Here’s a simple yet elegant idea. This can be made with regular tomato slices and sliced Italian bread for lunch sized portions, or Roma tomato slices and a thin baguette for appetizer portions (shown in the photo).
- crusty sliced bread (Italian bread or thin baguette depending if you are making meal or appetizer size)
- extra virgin olive oil
- Boursin Garlic and Herb cheese (can substitute whipped garlic and herb cream cheese)
- thin sliced Genoa salami
- sliced tomato (Roma if making small crostini, regular tomato if making lunch)
- coarse sea salt and dried thyme or Herbs de Provence
Brush both sides of each bread slice lightly with oil. Broil until toasted on both sides (flipping once). Spread a thin layer cheese on each slice. Top each with a slice of salami (half a slice if making the app) and tomato. Sprinkle sea salt and thyme or Herbs de Provence on top. Enjoy!
