Blackberry Brandy Jam
3 c crushed blackberries (~30oz)
5 1/2 c sugar
3 T Applejack or other brandy
1 (3oz) pouch liquid pectin
In a large saucepan, combine blackberries, sugar, and brandy. Bring to a rolling boil, stirring constantly. Add the pectin. Bring to a rolling boil again and boil 1 minute. Remove from heat, and skim off the foam. If desired, strain out the seeds. Ladle into 7 hot, sterilized half-pint jars. Process in a boiling water bath 5 min.
