Ham, Asparagus, and Broccoli Quiche
- 1 Perfect Pie Crust recipe
- 2 T olive oil
- 2 medium shallots, diced
- 1 1/2 c asparagus, cut on the diagonal into 1-inch pieces
- broccoli florets – want to end up with 1/2 c finely chopped
- 1/2 lb ham, cut into 1/4-inch cubes
- freshly ground pepper
- 1 c skim evaporated milk
- 3 large eggs
- 1/2-3/4 c shredded Swiss cheese
Preheat oven to 350F.
Line pie crust with parchment paper and fill two-thirds with baking weights (like dried beans). Bake 15 min, remove from oven and let cool a few minutes. Remove paper and weights. Poke the bottom of the pie pan with a fork and bake an additional 10 min until lightly golden.
Heat oil in a large nonstick skillet over med-high heat. Add shallots, and cook, until translucent, ~1 min. Add asparagus. Cook until asparagus are just cooked (al dente), ~5 min. Add broccoli, and cook another 2 min until softened. Chop the broccoli.
Increase oven temperature to 375°F. Layer the ham and veggies in the pie crust. Add some fresh ground pepper, and top with the cheese. In a medium bowl, whisk together milk and eggs. Pour over cheese. Bake until set in the center and golden on top, 30-35 min.
