Cheesy Chicken Casserole

Cheesy Chicken Casserole 

1 rotisserie chicken
1 can cream of chicken and mushroom soup
1 8oz container reduced fat sour cream
fresh ground pepper
1 8oz package shredded sharp cheddar, divided
25 Ritz crackers, crushed
1 T unsalted butter, melted

Preheat oven to 350. Romove the meat from the chicken bones; discard the skin and bones. Shred/chop the chicken into bite-size pieces. Stir together chicken, soup, sour cream, pepper (to taste), and 1 1/2 c cheese. Spoon mixture into a lightly greased 2qt baking dish.

Combine remaining 1/2 c cheese, crackers, and butter. Sprinkle evenly over top.

Bake 30 min until bubbly. Let stand 5 min before serving.
