Chicken Divan

Chicken Divan 

3 large chicken breasts, cooked and cubed
1 head broccoli, cut into florets
8 oz mushrooms, sliced
2 T unsalted
fresh bread crumbs
freshly grated Parmesan cheese

Divan Sauce:
3 T unsalted butter
3 T flour
1-1/2 c milk
3/4 c mayonnaise
2 t Worcestershire sauce
1/2 t nutmeg
4 T sherry
3/4 c heavy cream
1 can cream of celery soup

Blanche the broccoli: add to boiling water for 1 minute, then move to an ice water bath to cool quickly. Drain and set aside.

In a frying pan over high heat, brown the mushrooms in the 2 T butter until browned. Set aside.

In a saucepan, make a white sauce: Melt the butter, add the flour, and cook the flour a couple minutes. Whisk in the milk and heat, stirring, until thickened. Add the soup, mayonnaise, Worcestershire sauce and nutmeg. Mix well. Add sherry. Stir in the cream.

Place broccoli in a 13×9 baking dish, top with the chicken and mushrooms. Cover with the sauce. Dust the top with plain bread crumbs and fresh, grated Parmesan cheese. Bake at 400 degrees for 30 minutes.
