Ham and Macaroni Salad

Ham and Macaroni Salad

2 T c olive oil
2 T white vinegar
2 t Grey Poupon Country Dijon mustard
pinch allspice
3/4 c mayonnaise
2 T minced onion
1/2 t kosher salt
1/4 c thinly sliced celery
1/4 c chopped red bell pepper
3 c cooked and slivered ham
3 c diced cucumber
4 c cooked macaroni

Combine first 5 ingredients and whisk until smooth. Add onion, salt, celery, bell pepper, and ham. Marinate at room temperature for an hour.

Place cucumbers in a colander. Sprinkle with salt; let drain for an hour.

Combine cucumbers, macaroni, and ham-mayo mixture. Chill. Serves 8-10.
