I know they’re supposed to be passé, but I still love jellied salads!
Lime JellO Salad
1 pkg lime jello (8-serving size)
1 c boiling water
1 (8oz) pkg Neufchafel cream cheese, softened
1 (8oz) can crushed pineapple, drained
3/4 c chopped pecans
1 c lite Cool Whip
for garnish: candied pineapple, lime slices and zest, fresh pineapple, extra Cool Whip
In a bowl, dissolve jellO in boiling water. Add cream cheese and stir until well blended. Add pineapple and pecans. Refrigerate 30-45 min until slightly thickened. Fold in the Cool Whip and pour into a 2-qt mold. Cover and refrigerate for 4 to 24 hours. Garnish with cherries and more Cool Whip. Garnish!
