Cucumber Sauce for Salmon

Here’s a quick, light sauce that works great over salmon or salmon cakes. I adapted this recipe from Taste of Home magazine.

Cucumber Sauce for Salmon

  • ½ c cucumber, diced fine
  • ½ c plain Greek yogurt
  • ½ t dill
  • ½ t minced onion
  • ¼ t prepared horseradish
  • 1/8 t kosher salt

Put the cucumber in a strainer in the sink. Sprinkle with salt and let sit 30 minutes to extract excess water. Drain. Combine with the remaining ingredients and refrigerate until use. Use the same day.
