Blasted Broccoli

In Seattle, there is a trendy restaurant called the Black Bottle. I went once with a bunch of folks and we shared everything. One of the best meals of my life! And fortunately, I was able to track down their recipe. This is my adaptation. I’m not a big veggie person, so for me to most remember the broccoli from a foodie’s dream meal should really tell you something 🙂

Blasted Broccoli 

  • 1 1/4 lb broccoli, cut into florets (about 8 cups)
  • 3 1/2 T extra virgin olive oil, divided
  • 2 garlic cloves, minced
  • couple large pinches of crushed red pepper
  • kosher salt
  • fresh cracked mixed peppercorns

Preheat oven to 450.

Toss broccoli and 3 T oil on a rimmed baking sheet. Roast 5 minutes. Stir remaining 1/2 T oil, garlic, pinch salt, cracked pepper, and red pepper in small bowl. Sprinkle garlic mixture over broccoli; toss to coat. Roast until broccoli is cooked through and slightly charred, ~6 min longer. Season with more salt. Serve immediately.
