Holiday Sweet Potato Casserole

6 lb sweet potato
3/4 c brown sugar, divided
1/2 c heavy cream
4 T unsalted butter
1 t ground cinnamon
1/2 t ground nutmeg
1/2 t ground allspice
1 T vanilla extract
salt

Topping:
1 c brown sugar
1/2 c all-purpose flour
1/3 c unsalted butter
1 c chopped pecans

Place potatoes on baking sheet and pierce with fork. Bake at 400 until very tender (~1 hour). Remove from oven and cool slightly.

Butter a 2-3-qt baking dish. Halve the potatoes and scrape out the flesh from the skins into a large bowl. Add the brown sugar and the cream, butter, cinnamon, nutmeg, allspice, and vanilla. Using a mixer or potato masher, beat until smooth (~2 min). Season to taste with salt. Spoon into the prepared baking dish. Sprinkle the topping over, and bake at 400F until heated through.
