Here’s a very easy, super healthy brown rice recipe!
Orange Basil Brown Rice Pilaf
2 c prepared brown rice (see my Perfect Brown Rice recipe!)
1 large onion, diced
1 t extra virgin olive oil
juice of 1 orange (~1/2 c)
zest of a quarter of an orange
4 T fresh basil leaves, rolled and sliced into thin strips
1/2 t kosher salt (at least)
1/4 t fresh ground pepper
Cook the rice according to package directions. Set aside.
In a medium nonstick pan, saute the onion in the oil until soft. Add the orange juice and reduce a bit. Add to the rice and toss. Season well with salt and pepper to taste. Toss in the basil and serve. Serves 4-6.
