Tonight, I wanted to make a delicate cookie… No reason. I just wanted to make something pretty. I read a couple recipes earlier today with lime, both savory and sweet. I’ve got a lime tree in my backyard full of fruit right now. So, the seed was planted. I was also leaning towards a dessert anyway because we had leftover pizza for dinner (yes, that happens). So, I decided to create a new cookie. And I have to say, this delicate, almond cookie is so delicious, and polished, and sophisticated, and absolutely gorgeous!!
Almond Shorties with Lime Vodka Icing
- 1 c unsalted butter, softened
- ½ c sugar
- ½ t kosher salt
- ½ t almond extract
- 1 t water
- 2 c flour
- ½ c ground almonds
- 1 c powdered sugar
- 4 t milk
- 2 t lime flavored vodka
- 1 t lime zest
In a large mixing bowl, combine the butter, sugar, salt, almond extract, and water, mixing until smooth. Add the flour and combine. Mix in the ground almonds. Gather up the dough in the bowl, then with your hands, pick it up and shape into 2 (2-inch diameter) logs. Wrap in plastic wrap and chill in the fridge 30 minutes.
Preheat oven to 375F.
Take the dough out of the fridge and unwrap. Slice into ½-inch cookies, and put each on a baking sheet (you can gently reshape if one side flattened out while sitting in the fridge). Bake at 375F, 10-12 minutes or until just very lightly browned around the edges. Transfer cookies to a cooling rack.
While cookies are cooling, make the icing. In a medium mixing bowl, whisk together the powder sugar, milk, lime vodka, and lime zest. Drizzle over the cooled cookies. Makes 2 dozen cookies.
*Note: I wanted the icing to be delicate and on the thin side. If you want it a touch thicker, reduce the milk to 3 t.
